I Scream, You Scream, We All Scream for Vegan, Gluten-Free, Sugar-Free Ice Cream!

I hate dieting. I really really really hate dieting. Like, for reals. I know most of my brides end up dieting before their wedding, so I thought I’d share my misery with them so they don’t feel alone!

I’m no spring chicken, so it’s harder to lose weight than it was when I was in my twenties. I’ve been off of gluten, oat, eggs, and tomatoes for almost four years due to food sensitivities. Throughout the last year I’ve been working with a dietitian at my doctor’s clinic because I have issues with food. I have a hard time being balanced when I diet. At first she wanted me to do the Paleo diet, but I was miserable and starving, and I didn’t want to give up dairy. Well, the weight wasn’t coming off. Then I started eating sugar again… Oh boy, am I a sugar addict! I tried, unsuccessfully, for nine months to get off of sugar. I finally did a cellular cleanse and it worked!

Now I’m off of gluten, eggs, tomatoes, sugar, all grains, dairy, legumes, and all processed food. (I find it hilarious that I can have bacon but not dairy.) Feeling sorry for me yet? I am! However, I’m finally losing weight and feeling better! But I got really tired of starving all the time and only eating meat, veggies, and some fruit. I decided it was time to break out Pinterest and find some recipes even I, the busy businesswoman, could make. I was delighted when I found ice cream recipes, because ice cream is my ALL TIME FAVORITE! Doesn’t it look delish!? It is!

I made two types! Here’s a recipe for the mango:
Paleo Mango Ice Cream (sorbet)
1 bag of frozen cubed mango
Coconut milk in a can
Cinnamon
Stevia
Vanilla
Lacuma powder (totally optional)

Just dump the mango in the food processor, add as much coconut milk as you like (enough to help blend the ice cream), a pinch of cinnamon, a bit of vanilla, 2 teaspoons of Stevia, and if you like, for a richer flavor you can add Lacuma powder (it’s used a lot in raw desserts). You will need to put it in the freezer for a few hours to harden up. If you freeze it overnight, it will freeze solid, so just take it out and let it thaw for 30 minutes. Delicious!

The other kind I made was banana, coconut, macadamia. Just slice up a few ripe bananas and freeze them for at least 8 hours. Dump the frozen bananas in the food processor, add some coconut milk and cinnamon, then when it’s blended, throw in some roasted nuts of your choice and pulse them in. SO GOOD!
